Creamy cheesecake with berry compote swirls, cut into bite size pieces.

Ingredients

  • Berry Compote
  • 3/4 cup strawberries

  • 1 cup raspberries

  • 1/2 cups blueberries (optional)

  • 1 cup granulated sugar

  • 1/4 cup freshly squeezed lemon juice

  • Cheesecake batter
  • 3 eggs

  • 16 oz (2 packs) cream cheese

  • 2 tsp vanilla extract

  • 1 1/4 cups granulated sugar

  • 1/2 cup sour cream

  • 2 tsp lemon juice

  • Crust
  • 6 tbsp butter, melted

  • 2 1/4 cups crushed graham cracker

  • zest of 1 lemon

  • 1/4 tsp salt

Directions

  • Berry Compote
  • Begin by slicing the tops off of the strawberries and cut them in half. In a saucepan on medium heat, add in all the berries, lemon juice, and sugar. Let the berry compote cook down for about 10 minutes, stirring frequently with a rubber spatula, until a smooth mixture has formed.
  • You can strain the berry compote to remove any seeds if you would like. Set aside and let cool to room temperature, then place in the fridge.
  • Crust
  • Take your graham crackers and put them into a Ziploc bag. Use a rolling pin (or a food processor) to break down the graham crackers into small pieces.
  • Line the bottom of your pan with parchment paper, so the cheesecake removes easily.
  • Add your melted butter, lemon zest, and salt into the graham crackers and mix well. Spread the graham crackers out evenly on the bottom of the cooking tray and lightly press down to ensure it is slightly compacted.
  • Preheat your oven to 350 F.
  • Cheesecake Batter
  • In a stand mixer, combine the cream cheese and sugar. Beat for about 3 minutes.
  • Be sure to scrape down the bowl in between each step to ensure a homogenous batter.
  • Add the sour cream, lemon juice, and vanilla extract and let beat until well combined. Now you can begin to add each egg, one by one, until combined, avoid over-mixing here.
  • Pour the batter over your buttery graham cracker crust and smooth out evenly.
  • Take the cooled berry compote and add a few spoonfuls on top of the batter. Using a chopstick, toothpick, or small knife, gently marble the berry compote.
  • Get a larger pan that can fit the cheesecake dish inside of it. Add about 1/4 inch of water to the pan and place your cheesecake pan into the water bath. This will help the cheesecake to cook evenly.
  • Carefully add your cheesecake into the oven and let cook for 35–40 minutes. Once done, let the cheesecake cool to room temperature before placing in the fridge to cool for at least 3 hours.
  • Remove your cheesecake from the pan and cut into cubes. Top with some fresh berries, and enjoy!

Notes

  • I used a 8 in x 8 in x 2.5 in pan
  • I used a glass pan this time, but typically I would recommend using a carbon steel pan
