Lemon Valentine’s Day Cupcakes

Fluffy and tangy lemon cupcakes with a luxurious buttercream frosting!

Ingredients

  • 2 cups all purpose flour

  • 1 cup sugar, granulated

  • 1/2 tsp baking soda

  • 1 1/2 tsp baking powder

  • 1/4 tsp salt, kosher

  • 3/4 cup butter, unsalted room temp

  • 2 eggs, medium room temp

  • 1/2 cup milk, whole

  • 1/2 cup lemon juice, fresh

  • zest of 2 lemons

  • 1 tsp vanilla extract

  • Buttercream Frosting
  • 1 cup butter, unsalted

  • 4 1/4 cup confectioners sugar

  • 1 tsp vanilla extract

  • 2 tbsp milk, whole

Directions

  • Preheat the oven to 350 degrees F.
  • In a large bowl, sift together flour, sugar, salt, baking powder, and baking soda.
  • In a separate bowl whisk together eggs, milk, vanilla extract, lemon juice, melted butter.
  • In a stand mixer, slowly combine the wet and dry ingredients until homogenous. Avoid over mixing the batter.
  • Prepare your cupcake tins with liners and begin filling each one half way. Don’t overfill the cupcake liners, it can get messy quickly!
  • Bake for about 15-18 minutes. Check for doneness with a toothpick to the center of the cupcake. If it comes out clean without any cake residue, they’re done!
  • Buttercream
  • In a stand mixer, beat the butter to soften, then switch to the whisk attachment.
  • Add confectioners sugar 1 cup at a time until all is added.
  • Add milk and vanilla.
  • Taste to make sure it is sweet and delicious! If it is too thick, adjust with milk.

Notes

  • These cupcakes are amazing and can be enjoyed and decorated for any event.
  • Use an ice cream scooper to fill cupcake liners so they all have the same amount.
  • Measure out the flour on a food scale if you have one available. You don’t want to pack down the flour in a measuring cup.
  • You can also add lemon juice to the buttercream to make it extra tangy!

I know Valentine’s Day probably looked a little different for most of us this year. I’m sure a lot more of you were at home, making some tasty amazing meals for your loved ones. It is always great to get dressed and go out to a beautiful restaurant but I really love a good home-cooked meal and the comfort of my home. Anyone else?

These cupcakes are a fun activity to do with the family and friends or your spouse. Baking and decorating is a great way to bring people together and helps you tap into your creativeness. To me, nothing is better than cooking and baking with others. I cannot wait for my son to get a little older so I can share that with him!

Of course, these cupcakes don’t have to be “Valentine’s Day” themed. That is completely up to you. I know most people either love or hate Valentine’s Day and I can totally understand both views. So hey if you aren’t a fan, make them anti-Valentines Day cupcakes! It’s all about having fun.
