Lemon Valentine’s Day Cupcakes

Ingredients
2 cups all purpose flour
1 cup sugar, granulated
1/2 tsp baking soda
1 1/2 tsp baking powder
1/4 tsp salt, kosher
3/4 cup butter, unsalted room temp
2 eggs, medium room temp
1/2 cup milk, whole
1/2 cup lemon juice, fresh
zest of 2 lemons
1 tsp vanilla extract
- Buttercream Frosting
1 cup butter, unsalted
4 1/4 cup confectioners sugar
1 tsp vanilla extract
2 tbsp milk, whole
Directions
- Preheat the oven to 350 degrees F.
- In a large bowl, sift together flour, sugar, salt, baking powder, and baking soda.
- In a separate bowl whisk together eggs, milk, vanilla extract, lemon juice, melted butter.
- In a stand mixer, slowly combine the wet and dry ingredients until homogenous. Avoid over mixing the batter.
- Prepare your cupcake tins with liners and begin filling each one half way. Don’t overfill the cupcake liners, it can get messy quickly!
- Bake for about 15-18 minutes. Check for doneness with a toothpick to the center of the cupcake. If it comes out clean without any cake residue, they’re done!
- Buttercream
- In a stand mixer, beat the butter to soften, then switch to the whisk attachment.
- Add confectioners sugar 1 cup at a time until all is added.
- Add milk and vanilla.
- Taste to make sure it is sweet and delicious! If it is too thick, adjust with milk.
Notes
- These cupcakes are amazing and can be enjoyed and decorated for any event.
- Use an ice cream scooper to fill cupcake liners so they all have the same amount.
- Measure out the flour on a food scale if you have one available. You don’t want to pack down the flour in a measuring cup.
- You can also add lemon juice to the buttercream to make it extra tangy!
