Tiramisu

Ingredients
6 egg yolks, medium
2 (8 oz) packs of mascarpone cheese
1 tbsp Mexican natural vanilla
1 1/2 cups heavy whipping cream
1/4 cup granulated sugar, add to the egg yolks
1/3 cup granulated sugar, add to the heavy whipping cream
1 (7 oz) package of ladyfingers
1 1/2 cup espresso
1/4 cup cocoa powder
1 pack of strawberries (optional)
Directions
- Brew the coffee first and let cool.
- In a stand mixer, add in 6 egg yolks and 1/4 cup granulated sugar. Whip until a pastel yellow forms. I like to put my stand mixer to speed 6 to get the perfect pale yellow.
- Set aside egg and sugar mixture and clean out the stand mixer.
- In the stand mixer again, pour heavy whipping cream and whisk until soft peaks form. Add in mascarpone, vanilla, and 1/3 cup of sugar. Whisk until all combined.
- Gently fold the egg and sugar mixture into the mascarpone whip. Avoid over mixing.
- Prepare dish with a sprinkle of cocoa powder on the bottom. Then one by one dip the ladyfingers into the espresso for only a second or two. Align evenly in the dish.
- Next, add a layer of your mascarpone whip. Add one more layer of espresso-soaked ladyfingers and whip.
- Sift some cocoa powder on the top of the cake. Cover and place in the fridge to cool for 8-24 hours. Wait 24 hours if you can, you won’t regret it!
- Serve and garnish with your choice of berry or leave as is! Enjoy!
Notes
- I have used madeleines instead of ladyfingers and it tastes just as amazing! Just a little sweeter than ladyfingers and sometimes easier to find in stores!
