Comforting, fluffy, delicious banana bread, made from a few simple ingredients.

Ingredients

  • 4 over ripe bananas

  • 1 cup granulated sugar or tightly packed brown sugar

  • 8 tbsp butter, melted

  • 2 tsp vanilla extract

  • 1 1/2 tsp baking soda

  • 2 eggs

  • 2 cups AP flour

  • 1/4 tsp of salt

Directions

  • Preheat oven to 350 F and line your loaf pan with parchment paper.
  • Begin by mashing up your bananas with a fork. (If your bananas are not ripe enough yet, you can place them in the oven at 285 F for about 7 minutes, or until they are brown.)
  • Add the vanilla extract, melted butter, sugar and eggs into your mashed bananas and stir. In a separate bowl, combine the dry ingredients: flour, sugar, baking soda, & a pinch of salt.
  • Add the dry ingredients into the wet and mix until just combined. You want to avoid over mixing here, or else it will cause the bread to become dense.
  • Pour the dough into your loaf pan and cook for one hour.
  • After one hour, remove from the oven and slice up your banana bread. Enjoy!

Notes

  • The loaf pan I used was 9.25 x 5.25 x 2.75 in.
  • You can also add a tsp of ground cinnamon if you would like! Combine with dry ingredients at step 3
