The most tender, juicy balsamic honey chicken with seasoned veggies and buttery asparagus.

Ingredients

  • 4 chicken breasts, skinless/boneless

  • 1 bunch of asparagus

  • 1 1/4 cups grape tomatoes

  • 3 russet potatoes

  • 3 fresh basil leaves, torn

  • 1 white onion, large

  • 2 tbsp unsalted butter

  • 2 tbsp olive oil

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • 1 tbsp kosher salt

  • 2 tsp garlic salt

  • Balsamic Honey Sauce/Marinade
  • 1 cup balsamic vinegar

  • 1/2 cup honey

  • 3 tbsp olive oil

  • 1/2 tbsp red pepper flakes

  • 1 tbsp kosher salt

  • 1 tsp pepper, fresh ground

  • 1/2 tbsp onion powder

  • 1/2 tbsp garlic powder

  • 2 tbsp garlic, minced

  • 2 tbsp corn starch (to thicken the sauce after you marinate the chicken)

  • 2 tbsp water (to thicken the sauce after you marinate the chicken)

Directions

  • Begin by prepping the ingredients for the marinade and measure out your liquids. Also, be sure to wash all of your veggies!
  • Add the marinade ingredients to a bowl and whisk until well combined. Marinate chicken for at least 30 minutes. Puncture little holes in the chicken to allow the marinade to really saturate.
  • Preheat the oven to 400 degrees F.
  • While the chicken marinades, slice the potatoes, julienne the onions, and trim the bottoms of the asparagus. A good tip to check where to cut them is to bend the asparagus until it snaps naturally, and that’s where you’ll cut!
  • Place the onions, potatoes, torn basil, and tomatoes on a sheet pan and drizzle on about 2 tbsp of oil. Season with salt, pepper, thyme, oregano, onion, and garlic powder. Set asparagus aside.
  • Place the chicken on a sheet pan lined with aluminum foil & into the oven, leaving the remaining marinade in the bowl. You can also add in the sheet tray of veggies. Cook for about 25 minutes or until the internal temperature of the chicken reaches 165 degrees F.
  • While the chicken bakes, you can work on the sauce. On medium heat, add the rest of the marinade into the pan. Stir the sauce consistently for about 5 minutes. To thicken the sauce, add a slurry. A slurry is equal parts water and corn starch. I usually add about 2 tbsp of water with 2 tbsp of corn starch.
  • Sautée the asparagus with butter on medium heat until soft. Season asparagus with salt, pepper, and garlic salt.
  • Garnish with basil and enjoy!

Notes

  • To thicken the sauce you can add a slurry. (Equal parts water and cornstarch) Add in 1 tsp increments until desired thickness.
