The most tender, juicy balsamic honey chicken with seasoned veggies and buttery asparagus.

Ingredients

  • 1 bunch of asparagus

  • 2 tbsp unsalted butter

  • 2 cups grape tomatoes

  • 3 russet potatoes

  • 1 white onion, large

  • 6 chicken breasts, skinless/boneless

  • 2 tbsp olive oil

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • 1 tbsp kosher salt

  • Balsamic Honey Sauce/Marinade
  • 1 cup balsamic vinegar

  • 1/2 cup honey

  • 1/2 tbsp red pepper flakes

  • 1 tbsp kosher salt

  • 1/2 tbsp onion powder

  • 1/2 tbsp garlic powder

  • 1 tsp pepper, fresh ground

  • 3 fresh basil leaves, torn

  • 2 tbsp garlic

  • 3 tbsp olive oil

Directions

  • Begin by prepping the ingredients for the marinade and measure out your liquids. Also, be sure to wash all of your veggies!
  • Whisk together ingredients for the sauce and marinate chicken for at least 30 minutes. Puncture little holes in the chicken to allow the marinade to really saturate the chicken.
  • Preheat the oven to 400 degrees F.
  • While the chicken marinades, slice the potatoes, julienne the onions, and trim the bottoms of the asparagus. A good tip to check where to cut them is to bend the asparagus until it snaps naturally, and that’s where you’ll cut!
  • Place the onions, potatoes, torn basil, and tomatoes on an oiled sheet pan and season with salt, pepper, red pepper flakes, onion, and garlic powder. Set asparagus aside.
  • Place the chicken in the oven. You can also add in the sheet tray with your veggies. Cook for about 25 minutes or until the internal temperature of the chicken reaches 165 degrees F.
  • Sautée the asparagus with butter on medium heat until soft. Season asparagus with salt, pepper, and garlic salt.
  • Garnish with basil and enjoy!

Notes

  • To thicken the sauce you can add a slurry. (Equal parts water and cornstarch) Add in 1 tsp increments until desired thickness.
