Hearty, loaded nachos with ground beef, melted cheese, juicy jalapeños, topped with avocado, tomatoes, and a drizzle of crème fraîche.

Ingredients

  • 1 lb ground beef or turkey

  • 1 can of nacho cheese

  • 1 bag of tortilla chips

  • 1 cup shredded cheese blend of choice

  • 1 large white onion, diced

  • 1/2 cup black olives

  • 2 roma tomatoes, diced

  • 1 avocado, diced

  • 1-2 limes

  • crème fraîche or sour cream, for garnish

  • 1 can sliced pickled jalapeños (optional)

  • Seasonings
  • 1/2 tbsp cumin

  • 1/2 tbsp paprika

  • 1/2 tbsp kosher salt

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 2 tsp ground black pepper

  • 1 1/2 tsp oregano

  • 1 tsp chili powder

  • 1 tsp vegetable oil

Directions

  • Begin by dicing up your onions, avocado, tomatoes, and pre-measuring your other ingredients.
  • Combine the avocado, 1/2 of the onion, the tomato, and lime juice of 1 lime in a small bowl and set aside.
  • On medium heat, sweat the other half of your onions for 5 minutes in 1/2 tbsp of oil, then add in your ground beef and break it up with your spatula. Cook until the beef is brown all the way through. Depending on the fat percentage of the beef, you may want to drain the excess grease at this point.
  • Add in all of your seasonings and mix until well incorporated. Cook for 3 minutes, then remove from the heat and set aside.
  • In a separate pot on medium heat, warm up your nacho cheese for 3-5 minutes, stirring frequently.
  • Now you’re ready to assemble! Layer the tortilla chips onto the pan and top with the ground beef, nacho cheese, shredded cheese, olives, tomato, onion, and avocado. Continue layering until you use all of your ingredients.
  • Bake for 5-7 minutes to let the cheese melt. Remove from the oven, top with pickled jalapeños, crème fraîche, fresh lime juice and enjoy!

Notes

  • The ground beef I prefer to use is usually about 80% lean 20% fat
  • I also like to pour some of the jalapeño juice onto the nachos for a little extra flavor and spice.

A drizzle of crème fraîche, a generous spoonful of guacamole, and hot sauce to add a burst of flavor and creaminess. Fresh cilantro, chopped green onions, and a squeeze of lime juice can provide a refreshing finish. Serve your homemade loaded nachos hot, accompanied by extra salsa, guacamole, and crème fraîche on the side for dipping.
