Rich, creamy, tangy, mini cheesecake cups topped with mandarin oranges.

Ingredients

  • Graham Cracker Base
  • 1 1/2 cups graham cracker crumbs

  • 4 tbsp melted butter (unsalted)

  • 1 tsp vanilla extract

  • Cheesecake Filling
  • 1/3 cup sour cream

  • 1 lb cream cheese (room temperature)

  • 3/4 cup sugar

  • 1 1/2 tbsp vanilla extract

  • 2 eggs (room temperature)

  • pinch of salt

Directions

  • Graham Cracker Base
  • Preheat oven to 325 degrees F. Prep your muffin pan with cupcake liners and set aside.
  • Either by hand or in a food processor, make crumbs out of the graham crackers. Once there are no more big pieces, add the melted butter and vanilla, then pulse the food processor until well combined.
  • Using a spoon or the bottom of a cup, pack the cupcake liners with a base layer of the graham cracker crumble. Pack tightly with the bottom of a cup or glass.
  • Cheesecake Filling
  • In a stand mixer, add in the room temp cream cheese and lightly mix. Follow with adding in the sour cream, sugar, pinch of salt, and vanilla extract.
  • In a separate bowl, whisk together the 2 eggs and gradually add them to the stand mixer.
  • Once everything is homogenous and smooth, pour the cheesecake mixture into the muffin tins. Place in the oven and cook for 7-10 minutes. Let cool in the oven with the heat off and door slightly open for 20 minutes. Then place them in the refrigerator for a minimum of 2 hours.
  • Garnish with a berry coulis, fresh fruit, or enjoy as it!

Notes

  • Make sure the cream cheese is at room temperature. If not, the batter is very hard to mix and clumpy.
