Egg and Ham Avocado Toast with Tomato

A runny sunny side up egg on top of honey ham, creamy avocado, Colby jack cheese, ripe tomato slices, and wheat toast.

Ingredients

  • 1 medium ripe avocado

  • 4 thin tomato slices

  • 2 slices wheat bread

  • 2 eggs

  • 1 tsp black pepper, fresh ground

  • 1/2 tbsp kosher salt

  • 1 tbsp mayonnaise

  • 2 thin slices honey ham

  • 2 slices colby cheese (or cheese of your choice)

  • parsley for garnish (optional)

Directions

  • Heat up oil in a pan on medium heat. Once the oil is hot, cook the egg for about a minute on each side. Salt and pepper on both sides.
  • Prep and slice avocado, tomato, and ham. Toast the bread.
  • Put mayonnaise on the toast. Next layer with sliced avocado, tomato, salt, pepper, ham, cheese, and egg.
  • Garnish with parsley, enjoy!

Notes

A super simple yet tasty and satisfying breakfast! This is one of the quickest breakfasts I can make that still makes me feel like I went and ate at a restaurant.

I usually serve two slices of avocado toast per serving because one is just not enough. I made this for my husband and all-day he kept telling me how good it was. The avocado mixed with the runny egg yolk is such a great combo especially with the crunch from the toast and tomato. Yummy!

It kind of reminds me of an avocado toast/eggs benedicts in one. I honestly also love that it is pretty much mess-free. Don’t get me wrong, I love cooking a big breakfast, but I do not love the clean up as much…
