Egg and Ham Avocado Toast with Tomato

minutesA runny sunny side up egg on top of honey ham, creamy avocado, Colby jack cheese, ripe tomato slices, and wheat toast.
Ingredients
1 medium ripe avocado
4 thin tomato slices
2 slices wheat bread
2 eggs
1 tsp black pepper, fresh ground
1/2 tbsp kosher salt
1 tbsp mayonnaise
2 thin slices honey ham
2 slices colby cheese (or cheese of your choice)
parsley for garnish (optional)
Directions
- Heat up oil in a pan on medium heat. Once the oil is hot, cook the egg for about a minute on each side. Salt and pepper on both sides.
- Prep and slice avocado, tomato, and ham. Toast the bread.
- Put mayonnaise on the toast. Next layer with sliced avocado, tomato, salt, pepper, ham, cheese, and egg.
- Garnish with parsley, enjoy!

A super simple yet tasty and satisfying breakfast! This is one of the quickest breakfasts I can make that still makes me feel like I went and ate at a restaurant.
I usually serve two slices of avocado toast per serving because one is just not enough. I made this for my husband and all-day he kept telling me how good it was. The avocado mixed with the runny egg yolk is such a great combo especially with the crunch from the toast and tomato. Yummy!
