Creamy, tangy, pasta made of baked Boursin cheese, grape tomatoes, roasted garlic, and delicious herbs.

Ingredients

  • 3 cups of grape tomatoes

  • 2 packages of Boursin cheese (either flavor is tasty here!)

  • 1 whole garlic bulb, roasted

  • 2 tbsp olive oil

  • 1/2 tbsp salt

  • 2 tsp fresh ground pepper

  • 1/2 tbsp dried thyme

  • 1/2 tbsp dried parsley

  • 1/2 tbsp red pepper flakes

  • 1/2 box of pasta, here I used Ditalini pasta noodles

  • 1 small white onion small diced, optional

  • fresh basil for garnish, optional

  • 2 sliced, cooked chicken breasts to serve on the side, optional

Directions

  • First, you can begin by cooking your pasta according to the directions on the box. Preheat oven to 375 F.
  • While the pasta is cooking, wash your tomatoes and place them in a sheet pan or glass tray. Add the Boursin cheese blocks in the center of the pan. (Drain and set the pasta aside once done.)
  • Drizzle the olive oil all over the tomatoes and season with thyme, parsley, salt, and pepper. Place them in the oven on the middle rack. (If you are including the onion, you can add it in with the tomatoes now.)
  • Cut the top off of your garlic and drizzle with oil, salt, and pepper. Place it the oven as well and let bake for 35 minutes.
  • After 35 minutes, remove the garlic and tomato sheet pan from the oven. The tomatoes should be super tender and easy to mix together with the cheese. The garlic cloves should be soft and silky.
  • Let the garlic cloves cool for 5 minutes, then with gloves, squeeze the garlic cloves at the base, and each clove will pop out. Add them in to your tomato and cheese sauce. I just used a fork to mash it together!
  • Now you can toss in your pasta noodles and chicken if you would like.
  • Finish with red pepper flakes, some fresh basil, and enjoy!
