Beautiful, fluffy, salty and sweet pancakes with fresh berries inside!

Ingredients

  • 2 cups all-purpose flour

  • 1 large egg

  • 5 tsp baking soda

  • 1 tbsp salt (these have a salty/sweet taste, use 1/2 tbsp if you want just the sweet flavor)

  • 1 tsp cinnamon, ground

  • 1/4 cup sugar, granulated

  • 1 tbsp molina vanilla blend

  • 2 cups milk or water

  • 5 tsp olive oil

  • 1/2 cup raspberries/blueberries

Directions

  • In a large bowl, sift flour, salt, baking soda, and sugar.
  • Whisk in milk, vanilla blend, berries and egg. (you can save some berries to garnish if desired)
  • Pour 1 tsp olive oil at a time on a non-stick pan to medium heat.
  • Once heated, pour pancake batter 1/2 cup at a time.
  • Cook for about 2 minutes on each side, or until golden brown.
  • Repeat until you have no more batter, enjoy!

Notes

  • You can also omit berries and use chocolate chips, bananas, etc.
  • If you want to use butter instead of oil, rub a cold stick of butter on the hot pan to get a nice thin layer
