A quick, light and tasty salad with creamy avocado, grape tomatoes, and fresh mozzarella, drizzled with seasoned olive oil.

Ingredients

  • 2 avocados, large

  • 1 cup grape tomatoes

  • 1 cup mozzarella pearls

  • 1/4 bunch parsley

  • 1/4 cup olive oil

  • 1/2 tbsp red pepper flakes

  • 1/2 tbsp salt, kosher

  • 1 tsp pepper, fresh ground

  • 1 tsp garlic powder

Directions

  • In a small bowl, whisk together olive oil, salt, pepper, red pepper flakes, and garlic powder.
  • Dice your avocado, halve the tomatoes and add mozzarella pearls.
  • Drizzle on seasoned olive oil, garnish with parsley and enjoy!

Notes

  • You can also add balsamic vinegar and fresh basil to make it a Caprese salad!

The perfect, quick salad for this spring! It is one of my favorite meals to make.

In 5 minutes you can have a delicious, healthy meal! With this dish being amazingly easy to make, it is a great to throw together for all occasions!

This salad is very similar to a Caprese salad, the only real difference here is I did not use balsamic vinegar or basil, but I have made it that way before and it is just as delicious! You can customize this in so many ways. I have added chickpeas before and it did not disappoint!

As we slowly head into the hotter months, (at least here in Vegas anyway) I tend to crave a nice fresh and cold meal. This tomato, avocado, and mozzarella salad is a great option to bring for barbeques, picnics, baby showers, Easter, you name it!

Since we are living in 2021, I know a lot of these types of activities are on hold, but trust me this salad taste just as good when you just make it at home, while homeschooling your kids and doing 3 loads of laundry. Did I mention it only takes 5 minutes to throw together!?
