Juicy chicken breasts in a cheesy, sun-dried tomato cream sauce.

Ingredients

  • 1.5 lb of chicken breasts

  • 1 shallot, small diced

  • 1 cup of shredded parmesan cheese

  • 3 basil leaves

  • 1/4 cup sun-dried tomatoes

  • 1/2 of a jalapeño, small diced

  • 8 fl oz heavy whipping cream

  • 16 oz chicken broth

  • 2 tbsp unsalted butter

  • 1 tbsp olive or vegetable oil

  • Seasonings
  • 1/2 tbsp dried oregano

  • 1/2 tbsp dried thyme

  • 1 tbsp kosher salt

  • 1/2 tbsp black pepper

  • 1 tsp red pepper flakes

Directions

  • As usual, begin by prepping your ingredients. Small dice your shallot and jalapeño. Pre-measure your heavy whipping cream, parmesan cheese, sun-dried tomatoes, seasoning blend, and chicken broth.
  • Season each side of your chicken with salt and pepper.
  • Heat up a large pan on medium-high heat with 1 tbsp of oil. Sear your chicken on each side for about 3–5 minutes, until a golden brown color starts to form. I like to use thinly sliced chicken breasts to ensure they cook evenly and fairly quickly. Remove the chicken and set aside.
  • Turn the heat down to medium and toss in your shallots, jalapeño, and let sweat for about 1 minute.
  • De-glaze your pan with the chicken broth. Next, add in your heavy whipping cream and seasonings, and whisk together.
  • Turn heat to low-medium and begin incorporating the parmesan cheese in 1/4 cup increments, continually whisking, until all but 1/4 cup of cheese is left. Save the remaining cheese for garnish.
  • Add the basil, sun-dried tomatoes, and your chicken back into the sauce and let simmer for 7–10 minutes, stirring frequently. Top with remaining parmesan cheese and a few basil leaves if you’d like.
  • Serve alongside your favorite side dishes and enjoy!

Notes

  • When searing your chicken, you can also add 1 tbsp of unsalted butter to the oil to help the chicken brown + it adds extra flavor
  • If you buy large chicken breasts, you can cut them in half lengthwise or thin them out with a tenderizer
